One day in 1972 at Dorgali the perfumes of the sea and the supramonte of Barbagia combined in a small shop where Giovanni Esca and Pietrina Ruiu founded their artisanal Packectionery producing the typical pastry of the Dorgali tradition. Over thirty years the small shop has become a state-of-the-art and efficient laboratory which has always kept the same quality and care that still today is characteristic of Esca Packectionery's pastries. The production, which at the very beginning was only offered to the local clientele, has today spread its name outside the borders of the village. The stylised drawing of the "pistiddu" (a shortpastry tart with a filling of bran, refined must, and orange peel, prepared to celebrate Sant'Antonio Abate's feast) is the distinguished mark of Esca's pastries. |
